Locally sourced, climate change aware, and food that looks and tastes amazing always sounds like a good recipe. Barley Swine supports farmers and ranchers from their local Texas region. Multiple courses inspired by their farmer friends creates a menu that shifts with the ingredient availability and the aspirations of the kitchen. And their food looks like art.  

Barley Swine works with a company called Zero Foodprint to help them stay on top of their practices to always be moving in the direction toward offsetting their carbon footprint. They hope to be a leader in their community to encourage other restaurants to do the same. It only takes one bold company to show how beautifully it can be done to start the kind of chain reaction we all want.
